'' In the given ayat, the reference is to humans (....for you). There may be many kinds of cattle, but for humans these are eight. The ayat does not use the term only. These cattles are the animals, which are useful for humans. There uses may be, providing milk and meat, helping carry loads (donkeys), helping in travel (donkeys, camels, and horses) via shiachat

Only four / eight types of cattle?
39:6 He created you from a single soul. Then He made from it its mate. And He sent down for you of (mina) the cattle eight kinds. He creates you in the wombs of your mothers, creation after creation, in three darkness[es]. That is Allah your Lord; for Him is the dominion. There is no god except Him. Then how are you turning away?
(The Verse does not say that there are only four / eight types of cattle, but the sentence “for you of/from the cattle” implies that “among/from” all the cattle that exist, eight kinds are “for you”)(Allah knows best)
6:142 And of (wamina) the cattle (are some for) burden and (some for) meat. Eat of what Allah provided you, and do not follow the footsteps of Satan. Indeed, he is to you an open enemy. 6:143 Eight pairs - of the sheep two and of the goats two. Say, "(Are) the two males He has forbidden or the two females or that which the wombs of the two females contain? Inform me with knowledge, if you are truthful." 6:144 And of the camels two and of the cows two. Say, "(Is it) the two males He has forbidden or the two females or that which the wombs of the two females contain? Or were you witnesses when Allah enjoined you with this? Then who is more unjust than (one) who invents a lie against Allah to mislead the people without knowledge? Indeed, Allah does not guide the wrongdoing people."
(According to the context, people wrongly forbade some of the eight kinds of cattle which were allowed (6:144))(The Verses do not say that there are only four / eight types of cattle, but that’s the cattle that is “for you” (39:6, 6:142). Verse 6:142 makes distinction between cattle: some cattle is for burden, and some for meat, or for both)(It is interpreted that the mention of eight kinds of cattle might refer to the only quadruped animals or livestock or farm animals that are for you. The root of “l-an’ami” (the cattle) is N-Ain-M, and it means “soft in the concrete sense. In abstract, it means anything that can be understood as soft as in soft to touch and soft in treatment and soft life as in a life that does not have much hardship”)(Another point is that Verse 7:160 tells about eating quails, so, other than cattle is also allowed for eating.
